I was reluctant to pay so much more for cinnamon but the taste difference is amazing. Cassia cinnamon reduces sweetness according to my taste buds but this cinnamon greatly enhances the flavor. I can't tell if it enhances the sweetness or just doesn't reduce it but I love this product. Considering that most people do not use a large amount of cinnamon I would not be deterred because of the price. Then I read about ceylon cinnamon, which is healthier and taste sweeter. ceylon cinnamon, or true cinnamon, gave me the impression that it should smell so much better than cassia cinnamon. However, I somehow find the fragrance not as pronounced as cassia cinnamon. It is still good though. Maybe I'm more used to the smell of cassia cinnamon.
